COLD STORAGE


These are cold areas where ideal air is created with the help of cooling devices of the space, which is isolated from external conditions in order to preserve the freshness of the foods needed and to extend the shelf life.
The main purpose of cold storage is to preserve the appearance and internal structure of the product for a long time by preserving the freshness of the first day.
How Many Different Temperature Ranges Are There in Cold Storages?There are generally 4 different temperature ranges in cold storage.
Ambient Cooling: +12°C / +16°CIt is generally preferred in product processing, packaging and shipping parts. These areas must also be cooled in order not to deteriorate the ring of the cold chain. It should be noted that since the personnel work in these sections, the sound and air flow rate of the selected indoor cooling unit should not affect human comfort.
Cold Storage: -5°C / +8°CIt is the most commonly used temperature range in cold rooms. Fresh Fruits and Vegetables, Fresh Meat and Chicken Products, Milk and Dairy Products, Fresh Fishery Products, Bakery Products and Medicinal Medicines are stored at these operating temperatures.
Frozen Storage: -18°C / -25°CFoods that are shocked at -40°C should be stored in Deepfreeze (deep freezer) warehouses after the shocking process. Ice Cream, Frozen Fruit, Vegetables, Meat, Chicken, Fish Products and Frozen Bakery Products are stored at these operating temperatures. Since the variety of frozen food has increased in recent years, these warehouses have also become very common. The point to be considered is that the cooling load should be well calculated so that there is no thawing in the frozen products.
Shocking : -35°C / -40°CIt is the process of reducing the core temperature of foods to be stored for a long time to -18°C. After the Core temperature of the product reaches -18°C, it should be shipped to the Frozen Storage warehouse. -40°C Freezing chambers should not be used for storage. The point to be considered in these rooms is the selection of the cooling device. When choosing the cooling device, the type of product, its quantity, inlet temperature, room dimensions and the targeted shock duration should be taken into consideration. The shocking time should be kept short so that the shelf life of the food will be longer.
How is Cold Storage Made?First of all, Architectural layout project and team projects are drawn according to the type of product to be preserved and the targeted storage capacity. After the roofing process of the construction whose foundation and steel construction or concrete prefabrication is completed, the Cold Storage Wall and Ceiling Panels are assembled. After the installation of the panels, the floor insulation is laid and the steel mesh floor concrete is poured.
After the above processes, the Cold Room Doors are assembled and installed. Finally, after the cooling device is installed and commissioned, it is adjusted to the desired temperature and delivered.

How to Calculate Practical Cold Storage Cooling Load?The volume of the room (m3) is calculated by multiplying the Width x Length x Height of the place where the Cold Room is planned to be built. The cooling load of the room is calculated from the technical calculation sheet below for the desired operating temperature according to this volume. Appropriate device selection is made according to this resulting cooling load.
How should the Cold Storage Project be?A good and useful Cold Storage is possible with a well-designed project. The first information we will start with in cold storage projects is the type of product and the amount of storage. These two basics are very important. Then, the warehouse area is determined according to the storage quantities given.
For the 1,000 Ton Apple Project as an EXAMPLE;Storage Temperature: 0°CApple is calculated as approximately 200 kg in 1 m³ volume.
For 1,000 tons of apple storage, we will need a volume of approximately 5,000 m³.
When we put the apple crates on top of each other in the form of 6 and 3 pallets, the height will be 600 cm. If we calculate the ventilation space of 100 cm for the evaporator fans from above, the internal net height should be a minimum of 700 cm.
An area of 5,000 m³ ÷ 7 m height = 715 m² is needed.
